#1 Baking blog: Pizza Party

One of my hobbies is to make pizza. I recently had the chance to make pizza at a friend’s birthday party. This was my first time making a much larger quantity of pizza (25!). Usually, I have only made between 4 and 12 pizzas, so this was quite a big step up in terms of quantity. I had to make the dough in 5 batches as my mixer was not big enough. In total, I ended up making 7kg of dough. The dough recipe I used was a standard 60% hydration dough.

I started by mixing all the dry ingredients together.

I then slowly added the water in and kneaded on setting 1 or 2 depending on how the mixing was going for about 8 minutes.

Below you can see all 7kg of dough!

The dough was allowed to bulk ferment until it had doubled in volume, you can see this in the below picture of the bucket behind the peppers.

Then the big task of shaping all the doughs started! I did this at my parents house as they had much more fridge space than I do.

The doughs were shaped into approximately 280g balls.

The dough balls were then placed into small plastic containers with a little bit of oil to help them come out. All the family chipped in to help, here my dad is giving a hand!

All the doughs are now placed in the fridge to continue proofing overnight!

At the pizza party, we had the fortune of having two pizza ovens! My Roccbox and our friends wood fired Ooni.

Our friends had a nice table setup which made a perfect place to make pizza. I ended up buying a over counter cutting board for the shaping.

Here you can see one of the first few pizzas, I found that the pizzas became better throughout the afternoon as the dough came up to temperature. I think my parents fridge is much better than mine so the dough as actually cold.

All the extra dough, we turned into bread that was used for sandwiches! Pizza bread makes the best next day bread.

The pizza ovens were great for making chesnuts.
